01About the Maker
A New Flavor from a White Clove
"Muku Black Garlic" is made by aging garlic grown in Matsumoto by Shinshu Aozora Natural Farm. It is made exclusively from the "White Roppen" variety.
The farm tends the soil and surrounding vegetation to help its vegetables thrive. That care continues after the garlic is harvested.
02Drying Work
Slowly remove the moisture in the sun
Harvested garlic is typically dried by sun-drying. This method involves slowly removing moisture over several days to preserve the garlic's natural flavor.
Drying and aging are two separate processes. The craftspeople’s ingenuity is evident not only in the time it takes for the product to turn black, but also in the preparation that precedes it.
03About This Product
Aged for about two weeks in a small kettle
After drying, the garlic is aged in a small vessel for about two weeks. Care is taken to keep the heat even and achieve a smooth texture.
With a sweetness reminiscent of prunes and a fruity flavor, this dish offers a different experience from raw garlic. The farm strives to create a clean, refreshing taste with minimal strong odor or aftertaste.
04How to Enjoy It
Start with a small piece to see how it tastes.
Place a peeled clove on a small plate. Start with a small amount and taste it as is to appreciate its sweetness and texture. You’ll discover a flavor quite different from the garlic you know as a seasoning.
Why not try pairing it with a little cheese or bread? We’re featuring this dish so you can enjoy the natural sweetness that comes from the aging process.
