01About the Maker
Thinking About Beverages with a Focus on Aroma
Kusawake, created in Matsumoto by Nomura of KINO, is a drink made from botanical materials such as herbs, roots, and bark. The idea is to offer an aromatic drink even on days without alcohol, exploring combinations of plants to achieve that aim.
Fragrances that take center stage, those that provide a foundation, and those that tie the ingredients together. Great importance is placed on carefully considering the unique characteristics and compatibility of each ingredient to select the ones needed. Rather than focusing on beverage categories, the work begins with the fragrance to be created.
02About This Product
The Layers of Fragrance from Spices and Plants
Kusawake is a non-alcoholic drink combining granulated sugar, lemon juice, ginger, cardamom, coriander seeds, and vanilla beans.
Its aroma comes from the ingredients, without food additives such as flavorings or preservatives. It comes in 720 ml and 200 ml bottles. For either size, the maker suggests mixing roughly equal parts with an unflavored drink such as sparkling water or hot water.
03How to Enjoy It
Layering the tartness of pomegranate
Start by mixing it 1:1 with sparkling water or hot water. One way to enjoy it is to first take in the aroma, then move on to creating your own blends by adding fruit juice.
The maker’s pomegranate recipe uses 40 ml Kusawake, 80 ml pomegranate juice, and 40 ml sparkling water. Mix Kusawake and the juice well, then gently pour in the sparkling water. The drink layers spice aromas over pomegranate’s acidity.
04Another Way to Enjoy It
A pinch of sansho pepper on top of the ice
For the sansho variation, use 80 ml Kusawake, 80 ml water, a pinch of sansho, and a small amount of salt. Mix ice, Kusawake, water, and salt in a glass, then sprinkle the sansho over the ice.
The sansho initially releases its aroma, then sinks as you drink, before swirling up again toward the end. The aroma changes within the same glass over time: a recipe the maker offers for enjoying the progression of a drink.
